- This photo does no justice to how great this soup came out. Russet potato, butternut squash, cheddar & lots of fresh broccoli. Made with soy milk & homemade veg broth – the key is to cook the broccoli separately.

- I do love ramen. I don’t love sodium. Here’s what ramen noodles look like at our house – lots of veggies, tofu & homemade low-sodium vegetable broth.
- Salmon chowder! Carrot, celery, potato, homemade veg broth, shrimp & salmon.
- Grilled mushrooms, mediterranean grilled shrimp & Greek orzo pilaf with green pepper, spinach, tomato, red onion, kalamata olive & feta.

- Stuffed salmon & cauli-mash. The salmon isn’t really that big, just “butterflied” & stuffed with spinach, artichoke bottom, low-fat cottage cheese, slivered almonds & parmesean. Cauli-mash is mostly cauliflower (a little yukon gold potato) with dill & parlsey – made with soymilk.
- Spicy Thai Coconut Soup! Tomato, broccoli, mushroom, tofu, carrot, cauliflower, rice noodles and homegrown hot red peppers – in a spicy, citrus, coconut, cilantro broth.

- Veggie chili & jalapeno cheddar cornbread. 3 types of beans, carrots, zucchini, onion, fireroasted tomato.

- Oh we’re not that good. We add cheese & sour cream & onion too!
- Stuffed vidalia onion with wild/brown rice, mushrooms & soy. Stuffed zucchini with cheese and artichoke.

- Weeknight veggie plate: dilled carrots & cauliflower, steamed broccoli with hot pepper flakes & parmesan, yellow squash with vidalia onion, kale with balsamic reduction & parmesan risotto.
- Martini night! Dilled carrots, asparagus with lemon, cheesy rice, roasted chili-squash, kale with balsamic reduction & a small blacked salmon.
- Homemade veg stock from the juicer leftovers. Much lower sodium & using my veg scraps.
- Zucchini-corn fritters (actually, not as fried as they look), red pepper-tomato soup & spinach salad.
